Food Squibs: Emergency Meatball Soup Stands Ready

This Food Squib is like a thoughtful mother who lives in your fridge. But, if you’re keeping your mother in the fridge, it’s time to let her go or turn yourself into your local constabulary.

Men can cook, but they don’t always have the time or desire if they’re preparing meals for one. That can lead to excessive fast food or close relationships with pizza delivery guys.

Hearty soup recipes like this Emergency Meatball (…I already registered that as a band name…) Soup can be made in large patches and stored in the fridge for days — providing a proper home cooked meal after a little reheating. They can also be made in mega loads and frozen. 

Ingredients: • 1 lb. ground beef

• 1 Egg, slightly beaten

• 1/4 Cup bread or Panko crumbs

• 2 Tbsp chopped onion

• 1/2 Tsp salt

• 1/2 Tsp pepper

• 2 Tbsp olive oil

• 2 Cans beef broth

• 2 Thinly sliced carrots

• 2 Cups egg noodles•

• 1 Bay leaf

Directions: Mix beef, egg, bread crumbs, onion, salt and pepper. Shape into 24 meatballs. Brown meatballs In the olive oil. Drain oil. Add remaining ingredients. Bring to a boil. Reduce heat. Simmer for 20 minutes or until done (stirring occasionally). Remove bay leaf and serve.

If freezing, allow to cool before storing.
