Recipes: Slim Down for Summer with Low-Cal Options

These days everyone I know is trying to lose weight. They watch carbs, or at the very least try to eat healthy. A summer ahead will reveal any imperfections your body might offer, so we offer a little help.

The following two recipes are health conscious, low in carbs and definitively delicious.

LOW CARB CHICKEN

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/3 cup mayo
  • 1/3 cup low fat sour cream
  • 1/2 package ranch dressing (powder)
  • 2 tbsp heavy whipping cream
  • 1/2 cup Parmesan cheese
  • 1 cup sliced mushrooms

Preparation: Combine all ingredients except chicken. Spoon over chicken in baking pan. Placed mushrooms over mix. Top with Parmesan cheese. Bake at 350 degrees for one hour.

 

CAULIFLOWER CASSEROLE

Ingredients:

  • 1 head cauliflower, cut into florets (Precooked until soft. Drained and mashed)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon fried crisp and crumbled
  • 1/4 tsp salt or garlic salt
  • 1/4 tsp pepper

Preparation: Combine mashed cauliflower, sour cream, 1/2 cup cheese, salt and pepper. Top with the remaining cheese. Sprinkle crumbled bacon on top. Bake 1/2 hour at 350 degrees.
