Maybe I should’ve gone with a “fruited plain” reference in that headline, but it’s the Fourth of July. I’m supposed to be on vacation.
Still, it’s early enough on the USA’s birthday to make plans for a your dinnertime cookout. While the coals are still hot and before the fireworks go off, here’s a solid ole’ American BBQ Chicken recipe you can whip up in no time.
Land that I Love Barbecued Chicken
Ingredients:
- 6 chicken thighs or boneless chicken breasts (or combination)
- 2 tsp coriander seeds
- 4 Tbsp lemon zest
- 2 tsp fresh rosemary needles, chopped
- 4 Tbsp unsalted butter at room temp
- 2 Tbsp olive oil
- 2 tsp black peppercorns
- 1 1/2 tsp Kosher salt
Preparation: Crush coriander and peppercorns in a heavy pan. Transfer to a small bowl and add lemon zest, salt and rosemary. Mix with butter and oil.
Brush chicken with the mixture and continue basting while grilling the chicken. Keep grill closed during grilling process. Check every four minutes. Grill chicken until juices run clear.
