Recipe: Easy Dinner South Chicken and Biscuits

I love southern cooking, but I refuse to use cliched terms like “hankering” when I get a taste for it. So, I quietly he’d to the kitchen and trot out my resume for Easy Southern Chicken and Biscuits.

Easy chicken and Biscuits

Ingredients:

  • 1 can cream of celery soup
  • 1can cream of potato soup
  • 1 cup milk
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper
  • 4 cups cooked veggies, broccoli, cauliflower and carrots. I use a bag of mid western blend, thawed.
  • 2 cups diced, cooked chicken. ( a rotisserie chicken works great)
  • 1 pkg 7 oz. refrigerated buttermilk biscuits (10)

Preparation:

  1. Stir the soups, milk, thyme, pepper, vegetables and chicken in a 13×9 shallow baking dish.
  2. Bake at 400 degrees for 15 minutes, stir.
  3. Cut each biscuit dough into quarters. Arrange cut biscuits over the chicken mixture Bake for 15 minutes more or until the biscuits are golden.
