I love southern cooking, but I refuse to use cliched terms like “hankering” when I get a taste for it. So, I quietly he’d to the kitchen and trot out my resume for Easy Southern Chicken and Biscuits.

Easy chicken and Biscuits
Ingredients:
- 1 can cream of celery soup
- 1can cream of potato soup
- 1 cup milk
- 1/4 tsp dried thyme
- 1/4 tsp pepper
- 4 cups cooked veggies, broccoli, cauliflower and carrots. I use a bag of mid western blend, thawed.
- 2 cups diced, cooked chicken. ( a rotisserie chicken works great)
- 1 pkg 7 oz. refrigerated buttermilk biscuits (10)
Preparation:
- Stir the soups, milk, thyme, pepper, vegetables and chicken in a 13×9 shallow baking dish.
- Bake at 400 degrees for 15 minutes, stir.
- Cut each biscuit dough into quarters. Arrange cut biscuits over the chicken mixture Bake for 15 minutes more or until the biscuits are golden.
